It pairs well with delicately fleshy, fairly firm fish such as sea bass, meagre drumfish, bonito varieties and red mullet.
This wine is pale gold in colour. At first, the nose is led by toasted almonds and russet apples, which then evolves aromatically to offer floral notes and hints of iris, orange blossom and citrus zest. This Champagne's texture is reminiscent of lace; the body is svelte, vibrant and accompanied by a fine acidity. It finishes delicately with nice length, acidity and mineral notes.
