Jerez, Fino Cuatro Palmas

Fino Cuatro Palmas is an extremely rare, 40 year-old sherry, now technically a fine, old amontillado. Known as the ‘Museo Solera’, only six casks remain in the cellars, with this bottling being limited to half a cask. It is bottled without filtration or clarification.

A far darker colour than its counterparts, with an almost caramel hue. On the nose, this shows characters of butterscotch and Christmas spice alongside the keynotes of citrus peel, toasted almonds and iodine. The palate is bone dry, yet rich and full-bodied, with a silky, smooth texture. Broad toffee, coffee and fig characters come through, alongside lighter, more delicate notes of bergamot, lemon verbena and lime-flower. Beautiful.
