First Year Product: 1996 Grapes origin: Montefusco (AV), Tufo (AV), Santa Paolina (AV), Petruro (AV). Vineyard altitude: 500m sm.sm for the vineyards of Tufo and Santa Paolina, 400 m. slm for the vineyards of Montefusco and Petruro. Breeding System: Backrest - Guyot Plant density: 4500 strains per hectare Yield per hectare: 80 quintals per hectare. Soil features: limestone clay, loose with good skeleton equipment. Harvest period: first week of October. Vinification: Static decanting of the must after soft pressing of the inner clusters; inoculated with selected yeasts on the clear, fermentation and aging in steel. Fermentation tub material: stainless steel. Fermentation temperature: 16°C Bottling time: second week of February following harvest. Tasting notes of Greek Tufo DOCG Colour: intense and compact straw. Nose: typical of tall wines, green apple, jasmine, cedar and wild honey. Against the background well integrated mineral notes and mentholate. The youth wine has primary fragrances that after 5/10 years evolve into fascinating hydrocarbons. Palate: full and fresh mouth. The finish is long and persistent with very obvious flavour. Recommended pairing: Ideal for general risotti and white meat. Great for fish or smoked meat. After a few years of refinement, even on herborinated cheeses.
