Wiston Estate The Library Blanc de Blancs Collection, SPARKLING, 6x75cl

2010 was a benchmark year at Wiston: a vintage of ideal balance between yield & ripeness of fruit, which produced stunningly complex and elegant wines. Our single vineyard, single vintage, single variety (100% Chardonnay) Blanc de Blancs has layers of honey, truffle, lemon zest, Danish pastry and crushed oyster shells, with a sublime finish that goes on and on. Winemaking: The Chardonnay grapes were pressed in our traditional Coquard press, then half the juice was fermented in stainless steel tanks and half in old oak barrels. The still wine was rested on its lees for several months until springtime, bringing additional complexity and structure. Due to the ideal ripeness of the fruit malolactic fermentation was blocked leaving the wine with natural malic ?energy?. Bottling took place in late spring of 2011, and then secondary fermentation and lees ageing followed. This Library Collection release was disgorged in November 2018 and has since rested on cork.
